Extra dry, please
All across the country, farmers markets are brimming with shiny fall
fruit.
While local and organic produce are old hat in these circles, we're
running across more farmers using dry farming techniques. This means
that trees get their water only from rainfall and produce fewer,
tastier and much more aromatic fruit.
These dry-farmed fruits tend to be a little more expensive since
trees don't produce as much. But if you can get your hands on some,
the flavor and room-filling scents speak for themselves.
We find this low-impact technique (philosophy?) well suited to our
style of artisanal vodka making, as only the most flavorful fruits
make the cut here at the Fruit Lab.

| Mahi Mahi + Hummingbird Cocktail

RECIPE FOR Citrus Glazed Mahi Mahi
with Julienned Vegetables, Fresh Citrus & Passion Fruit Vinaigrette
(Serves 4) |

Ingredients
4 Mahi Mahi filets (6 oz cuts)
4 tbsp canola oil | 2 tbsp butter
2 cups julienned veggies (peppers, carrots, zucchini, etc.)
20 mixed citrus segments (orange, blood orange, grapefruit,
tangerine)
1 cup passion fruit vinaigrette*
4 tbsp citrus gastrique*
4-5 basil leaves, cut paper-thin
Method
Preheat grill. Oil filets & season
with salt & pepper. Grill fish to desired doneness. As fish cooks,
heat a large sauté pan over med-high heat. Add butter & vegetables
Cook until just done. Season with salt & pepper. To plate, spoon
passionfruit vinaigrette in center of the plate. Place a small pile
of the vegetables in the center. Top with fish and lightly drizzle
gastrique over. Sprinkle with basil. Garnish with five citrus
segments.
*Passion
Fruit Vinaigrette
1 cup passion fruit, pureed
1 whole egg | 1 egg yolk
1 tsp mustard | 1 tbsp honey
2 cups oil | Salt & pepper
Combine all ingredients, except oil, in food processor. Puree for 15
secs and add oil slowly until all is incorporated. Taste for
seasoning. |
*Citrus Gastrique
2 cups orange juice
1/2 cup white wine vinegar
1/2 cup sugar
Combine ingredients in a small saucepan over medium heat and stir
until sugar dissolves. Bring to a boil and reduce to a slow simmer.
Skim often any foam that appears and reduce until mixture coats the
back of a spoon. Cook to a syrupy consistency.
Hummingbird Cocktail

1 1/2 oz Modern Spirits
Grapefruit Honey Vodka
1/4 oz. Campari
1/4 oz agave nectar
1 oz fresh grapefruit juice
Splash of soda
Stir first four ingredients in ice-filled shaker.
Add grapefruit juice & splash of soda. Shake vigorously.
Strain into chilled martini glass. Garnish w/ grapefruit segment. |

vodka
1/2 oz Luxardo Maraschino Liqueur
1 oz freshly squeezed Ruby Red Grapefruit juice
Shake with chipped ice and strain over ice into a rocks glass.
Garnish with a sprig of fresh sage
